Homemade Red Pepper Bisque

Hi Folks,

Time for some soup recipes with the cold weather settling in!

Ingredients:
4 large red peppers, diced
Canola Oil
Seasonings (my preferences are dried basil, garlic powder, and red chili flakes)
1/4 cup Silk Creamer
1/2 Cup Water
Salt and Pepper to taste

1.  Dice up the peppers into 1 inch cubes and place in medium sized pot with 2 tablespoons of oil.

 

2.  Cook peppers down, covered, until softened.  Be sure to put your seasonings on now to really get the flavor in there.


3.  Transfer peppers to a blender and add 1/2 cup of warm water.  Blend to your liking.  You can either go on high for a more smooth soup or on a lower speed for a heartier soup.


4.  Return puree back to the cooking pot and add 1/4 cup of Silk Creamer.


5.  Reduce over low heat, uncovered until desired consistency is reached!  Salt and pepper to your liking.

6.  Remove from heat and serve!
